new year's day good luck dip

I got this simple recipe from a lovely lady in Mathis, Texas, when I taught there in the mid-90s. She introduced it to me by challenging me to guess the secret ingredient (the black eyes). I couldn't guess it! It is our favorite New Year's Day or game-day (Hook 'em Horns!) snack. Even Aggies and Sooners love it! I hope you enjoy it as much as we do.

Ingredients

  • 1 pound velveeta cheese
  • 1 can black-eyed peas, with or without jalapenos
  • 1/2 to 1 sticks margarine (start with 1/2 stick and adjust as desired)
  • 4-6 - green onions, diced

How To Make new year's day good luck dip

  • Step 1
    Carefully rinse and thoroughly drain black-eyes, then place in a large, microwave-safe bowl. Mash with the back of a fork until fairly smooth.
  • Step 2
    Dice the green onions. Cube the Velveeta and margarine and place all into the bowl with the peas. Stir with a gentle folding motion to pre-mix the ingredients.
  • Step 3
    Microwave on high for 2 minutes. Stir and continue to heat until dip is creamy and smooth, stirring occasionally. Stir often to avoid burning.
  • Step 4
    Enjoy with tortilla chips, crackers, pita chips, or top a baked potato with it. Delicious and so easy!
