Use appetizers plain or with a touch of sour cream. Use appetizers with a salad by cutting them in smaller pieces.

Ingredients

  • 1 cup chickpea flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 1 cup water
  • 5 tablespoons olive oil, divided 2, 2, 1
  • 1 1/2 teaspoons minced fresh basil or 1/2 tsp dried rosemary
  • 1/4 teaspoon garlic powder
  • 1/4 - 1/2 cup cheese, grated (your choice)

How To Make gluten free appetizers

  • Step 1
    Sift chickpea flour in a medium bowl. Stir in salt and pepper. Gradually whisk in water to create a smooth batter. Stir in 2 Tblsp olive oil. Allow batter to rest at least 30 minutes. Preheat oven to 450. Wait 10 minutes and place a 9-10 inch iron skillet in oven to heat.
  • Step 2
    While skillet is heating add basil, rosemary and thyme to the batter and whisk until smooth. Carefully remove skillet from oven. Add 2 Tblsp more of olive oil to the skillet and swirl to coat evening. Immediately pour in the batter and spread it out evenly. Bake 12-15 minutes or until edges begin to pull away from sides and center is firm. Remove skillet from oven. Then turn oven to broil. Brush top of mixture with 1 Tblsp of olive oil. Top with grated cheese. Place skillet back in oven and broil for 2-4 minutes until cheese is melted. Cut into wedges or small shapes and serve warm.
