I was hungry and wanted chicken salad, but not the same as usual. We like anything spicy and this is the recipe. Can be eaten on crackers or as a sandwich, or stuffed in an avocado!

Ingredients

  • 1 can(s)
    cooked chicken breast
  • 1 stalk(s)
    celery, chopped
  • 1
    small jalapeno pepper, sliced thin
  • 2 Tbsp
    chopped green onion
  • 1/2 tsp
    lime juice
  • 2 tsp
    mrs. dash southwest chipotle seasoning
  • 2 tsp
    your favorite salsa
  • 2 sprig(s)
    cilantro, fresh, just leaves

How to Make Chipotle Chicken Salad

Step-by-Step

  1. Drain a 10oz can of chicken breast, save broth for another use.
  2. Combine ingredients in a bowl and mix just breaking up chicken to small pieces for sandwiches or even smaller for crackers.
  3. Use cilantro leaves as a garnish or chop and add to salad.
  4. If you like jalapeños but not the intense heat, clean and discard ribs and seeds. Use gloves when working with hot peppers.
