I was hungry and wanted chicken salad, but not the same as usual. We like anything spicy and this is the recipe. Can be eaten on crackers or as a sandwich, or stuffed in an avocado!

Ingredients

  • 1 can cooked chicken breast
  • 1 stalk celery, chopped
  • 1 - small jalapeno pepper, sliced thin
  • 2 tablespoons chopped green onion
  • 1/2 teaspoon lime juice
  • 2 teaspoons mrs. dash southwest chipotle seasoning
  • 2 teaspoons your favorite salsa
  • 2 sprigs cilantro, fresh, just leaves

How To Make chipotle chicken salad

  • Step 1
    Drain a 10oz can of chicken breast, save broth for another use.
  • Step 2
    Combine ingredients in a bowl and mix just breaking up chicken to small pieces for sandwiches or even smaller for crackers.
  • A tasty bite!
    Step 3
    Use cilantro leaves as a garnish or chop and add to salad.
  • Step 4
    If you like jalapeños but not the intense heat, clean and discard ribs and seeds. Use gloves when working with hot peppers.
