Ingredients
- 1 1/2 cups parmesan cheese, fresh, grated
- 1 tablespoon all-purpose flour
- ADD IN (OPTIONAL):
- 1 - 2 teaspoons lemon zest
- 1 - 2 teaspoons pepper
- 1 - 2 teaspoons scallions, sliced thin (both greens & whites)
- 1 - 2 teaspoons curry powder
- 1 - 2 teaspoons coriander
- 1 - 2 teaspoons smoked paprika
- 1 - 2 teaspoons bacon, cooked & crumbled

Step 1Preheat oven to 375 degrees F.

Step 2In a large bowl add cheese & flour (& any spice, herbs or zest you wish to use); mix well.

Step 3Using 1/8 measuring cup, scoop out cheese mixture making 12 mounds on 2 silpat or parchment paper lined baking sheets & sprayed with cooking spray; flatten into 4" rounds & bake 8 - 10 minutes.

Step 4While still hot, gently remove with a thin spatula & let cool completely.
