This is just one of those “hmmmm” what can I make that is good and quick for lunch?
And since I only had a handful of chips, this is what I came up with.
You’ll want to eat this as soon as it comes off the frying pan, otherwise the chips will get soggy.
I had a few zesty bread & butter pickles with it and it was amazing!

2 slices of bread { whatever kind you have or like } i had deli rye bread.
salted butter for the bread
about 2 or 3 ounces of thinly shaved white cheddar cheese with peppers
1 cup or so potato chips { lightly crushed }
zesty bread & butter pickles

  • 1Butter one side of each slice of bread.
  • 2Grate the cheese, it looks like { cheese snow right? }
  • 3Crush the potato chips ever so slightly.
  • 4Place one slice of the bread { buttered side down } on a non stick pan.
  • 5Top with the cheese.
  • 6Put the crushed potato chips on top of the cheese. It’s hard to see the difference with the white cheese and chips, for that I am sorry 
  • 7Top with the remaining cheese
  • 8Put the second slice of bread on top { buttered side up } grille covered till the one side is golden brown.
  • 9Remove the cover, turn over and continue frying uncovered till the second side is golden and the cheese has melted.
  • 10Have a few pickles with this!
