This is just one of those “hmmmm” what can I make that is good and quick for lunch?
And since I only had a handful of chips, this is what I came up with.
You’ll want to eat this as soon as it comes off the frying pan, otherwise the chips will get soggy.
I had a few zesty bread & butter pickles with it and it was amazing!

Pan Fry

2 slices of bread { whatever kind you have or like } i had deli rye bread.
salted butter for the bread
about 2 or 3 ounces of thinly shaved white cheddar cheese with peppers
1 cup or so potato chips { lightly crushed }
zesty bread & butter pickles

1Butter one side of each slice of bread.
2Grate the cheese, it looks like { cheese snow right? }
3Crush the potato chips ever so slightly.
4Place one slice of the bread { buttered side down } on a non stick pan.
5Top with the cheese.
6Put the crushed potato chips on top of the cheese. It’s hard to see the difference with the white cheese and chips, for that I am sorry 
7Top with the remaining cheese
8Put the second slice of bread on top { buttered side up } grille covered till the one side is golden brown.
9Remove the cover, turn over and continue frying uncovered till the second side is golden and the cheese has melted.
10Have a few pickles with this!
