Potato Chips On a Stick

A very unusual way to serve chips.

wooden skewers
1 qt
vegetable oil
yukon gold potato, sliced into paper thin rounds
1/4 c
grated parmesan cheese
salt & pepper


1Preheat oil in a large pot over medium high heat. Thread potato slices onto skewers (use a mandolin for slicing potatoes paper thin in no time). Once oil reaches 350, carefully place skewers in pot, 2 at a time, and fry 6 to 8 minutes. Drain on paper towels. Sprinkle with Parmesan and season with salt and pepper to taste. Serve warm. Serve with ketchup, and if you want ketchup with a “kick”, mix in a few dashes of Tabasco sauce. These are great for parties when set upright in small cups.
