1Peel and core pineapple. slice pineapple about 1/3 inch thick rounds then dice. you should have about 4 cups. Place in a large bowl. chop pepper in about the same size and add to bowl along with the peppers. mix well and then add the tomatoes .
2In a smaller bowl whisk together the lime juice, zest, sugar, oil and pepper flakes, pour over the vegetables. Just before serving dice the avocado and toss with the coriander and pineapple etc,....Set into refrigerator for at least 2 hours or overnight.
