This is a colorful salsa, filled with fruit and vegies and is great served over chicken, fish or pork..Also great served with crisp pita bread or corn chips. this recipe makes about 6 cups.

Ingredients

  • 1 medium fresh pineapple peeled and cored
  • 1 large red pepper
  • 1 large green or yellow pepper
  • 2 cups grape tomatoes cut in half
  • 1 cup finely chopped red onion
  • 2 large limes, juiced about 1/2 cup and 1 tbsp lime zest
  • 2 tablespoons canola or olive oil
  • 2 tablespoons granulated white sugar
  • 1 teaspoon dried chili flakes or 2 tbsp fine chopped and seeded jalapeno pepper
  • 3 - ripe but firm avocados
  • 1 cup finely chopped coriander

How To Make avocado pineapple salsa

  • Step 1
    Peel and core pineapple. slice pineapple about 1/3 inch thick rounds then dice. you should have about 4 cups. Place in a large bowl. chop pepper in about the same size and add to bowl along with the peppers. mix well and then add the tomatoes .
  • Step 2
    In a smaller bowl whisk together the lime juice, zest, sugar, oil and pepper flakes, pour over the vegetables. Just before serving dice the avocado and toss with the coriander and pineapple etc,....Set into refrigerator for at least 2 hours or overnight.
