1/2 teaspoon ground black pepper
1 1/4 pound ground beef
1 medium onion, medium diced
3 cloves garlic, minced
3 tablespoons Spice Blend (recipe included)
1/4 cup tomato paste
2 cups unsalted beef stock
4 tablespoons butter
4 tablespoons flour
2 cups unsalted beef stock
1 (15 ounce) can tomato sauce
1 teaspoon sugar
3 1/2 tablespoons Spice Blend (recipe included)
1 (15 ounce) black beans, rinsed and drained
1 1/2 cups prepared Cilantro Lime Rice, Mexican rice, or plain, cooked white or brown rice
6 large (10-inch) burrito-style tortillas
12 ounces Colby-jack cheese, grated
