INGREDIENTS
For the pâte à chou (chou pastry):
• 1 cup water
• 1 2/3 cup (200g) all-purpose flour
• 1/3 cup + 1 tbsp (100g) unsalted butter
• 4 large eggs
• 1 pinch of salt
For the filling:
• 7 oz (200g) salmon
• 1 1/8 cup (250g) cream cheese
• 4 tbsp heavy cream
• 1/2 lemon (juice)
• 2 tsp grated horseradish
• 1/4 bunch of chives
• Salt and pepper
