4 Poblano peppers, cut in half
2 cups uncooked pasta (macaroni, elbow, or other small pasta with a hollow hole works well)
4 tablespoons butter
4 tablespoons flour
3 cups milk
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 cup Crème fraîche
1 cup sharp cheddar, shredded
1 cup smoked cheddar, shredded
1/4 cup diced smoked poblano peppers (from above)
1/4 cup panko breadcrumbs
1/2 teaspoon salt
1/2 teaspoon smoked paprika
