1 medium Yellow Onion (diced)
1 quart Beef Broth
1 Bay Leaf
1 tbsp Brown Sugar
1 tbsp olive oil
1 Asian Pear (cored and roughly chopped)
3 Chipotle Chilis (plus 1 tbsp Adobo Sauce)
6 Dried Ancho Chili Peppers
1 tbsp Smoked Sweet Paprika
1/2 tbsp Cumin
1 tsp Coriander
1/2 tbsp Sea or Kosher Salt
1/2 tbsp Black Pepper
1 tbsp Chili Powder
1 tsp Dried Oregano
2 tsp All Spice
