INGREDIENTS

1 24 oz. bag baby yukon gold potatoes

1 10 oz box frozen spinach, thawed and squeezed dry
•
1 small yellow onion, chopped
•
3 garlic cloves, minced

8 oz. shredded shredded sharp cheddar cheese, or cheese of choice. Reserve ½ cup of the cheese.

4 oz. ⅓ less fat cream cheese
•
¾ C. light sour cream
•
1 t. nutmeg
•
¼ - ½ C. chicken, vegetable broth or milk to thin, if needed
•
1 T. Olive oil
•
1T. Butter
•
Sea salt and fresh cracked pepper to taste.
