1/2 cup coconut oil, plus extra for greasing
4 cups old-fashioned rolled oats
1 cup pistachios, shelled and unsalted
1 cup unsweetened coconut flakes (chips)
3/4 cup pure maple syrup (the darker the better)
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon kosher salt
1 cup sliced dried apricots (about 5 ounces)
