INGREDIENTS
1 tablespoon olive oil
1 pound beef stew meat or cut-up beef roast
1/2 cup uncooked pearl barley
8 - 10 potatoes, peeled and cut into chunks
3 - 4 carrots, peeled and sliced
1 small onion, peeled and chopped
1 cup lima beans or frozen/fresh veggies of choice (green beans or corn)
2 teaspoons fresh thyme leaves (or about 1 teaspoon dried)
2 teaspoons chopped fresh rosemary (or about 1 teaspoon dried)
2 stalks celery, chopped (optional - I omit)
10 cups stock (I prefer a combination of chicken and beef, but all beef is traditional)
1 cup frozen peas
Salt and pepper, to taste
