1-1/2 cups non fat milk (almond milk works well too)

2 large eggs

1/4 cup sugar
•
1 teaspoon vanilla
•
1/2 teaspoon cinnamon

1/8 teaspoon salt
•
Optional possible additions:
•
1/4 cup shredded coconut
•
1/3 cup raisins or chopped dates (chopped figs, chopped apricots or other dried fruit)
•
1/2 teaspoon grated lemon zest
•
1 teaspoon fresh lemon juice
•
1 - 2 teaspoons instant coffee granules
