Herbed Red Rice

1 cup red rice

1 cup fresh parsley leaves -roughly chopped

1 lemon - juice and zest
•
1 cup fresh coriander leaves -roughly chopped

½ cup fresh mint leaves - roughly chopped

1 tablespoon extra virgin olive oil

2 tablespoons unsalted cashew nuts (roasted- see notes)
