1 tablespoons minced fresh thyme or 1 teaspoon dried (I used dried)

1 teaspoon kosher salt
•
1/2 teaspoon black pepper

2 – 14.5 ounce cans low-sodium beef broth
•
1 teaspoon Worcestershire sauce
•
10 whole peppercorns
•
1 bay leaf
•
1/2 large onion cut into chunks
•
2 tablespoons olive oil
•
2 large yellow onions, thinly sliced

1 teaspoon kosher salt
•
2 large bell peppers (red or green or one of each), seeded, ribs removed and cut into strips
