1 large onion, diced (about 1 1/2 cups)

1 large green pepper, stemmed, seeded and diced (about 1 cup)

4 bay leaves
•
4 cloves of garlic, minced
•
1 teaspoon ground cumin
•
1 teaspoon salt
•
1 teaspoon ground black pepper
•
water to cover the beans + one inch
•
1 teaspoon apple cider vinegar
