INGREDIENTS
2 lbs. chicken thighs, fat trimmed (or chicken breasts)
1 green pepper, seeds removed, chopped into large chunks (you can also use red, orange or yellow)
1 jalapeño, seeds removed, sliced (optional for spice)
1/2 sweet onion, chopped
5 medium carrots, peeled and chopped
1-14.5 oz can diced tomatoes
2 garlic cloves, minced
1/2 cup coconut milk
2 Tablespoons curry powder
1 teaspoon cumin
1/2 teaspoon cayenne red pepper {this adds spice too, leave out for less spice or add more for more spice}
1/2 teaspoon salt
1 teaspoon coriander
6 oz. tomato paste
Garnishes:
Cashews
Fresh jalapeños slices {seeds removed}
Freshly chopped cilantro
Dollop of plain or Greek yogurt
