INGREDIENTS

1 cup celery, about 1/2" thick

1 cup sliced carrots, about 1/2" thick

3/4 cup sliced onions about 1/2' thick or near the same size as the other vegetables

2 bay leaves
•
1 teaspoon salt
•
1/2 teaspoon pepper
•
6 cups water (or water to cover)
•
1 chicken bouillon cube (optional)
•
1 8-ounce package dried tortellini (cheese, spinach, mushroom, whatever you like)
•
1 teaspoon fresh thyme leaves
•
2 tablespoons fresh chopped parsley
