INGREDIENTS
1.5 lbs. boneless, skinless chicken breasts
2 cup chopped sweet onion {about 1/2 of an onion}
1 cup chopped green pepper {about 1/2 of a green pepper}
1 cup chopped red pepper {about 1/2 of a red pepper}
15 oz. can black beans, drained and rinsed
4 oz. can of diced green chilies
4 cups chicken broth
1 cup salsa {I used a Roasted Tomato Salsa}
1 cup water
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cayenne red pepper
1 cup Crystal Farms Shredded Wisconsin Sharp Cheddar Cheese
1 1/2 cups Crystal Farms Shredded Mexican 3 Cheese
Garnishes:
Avocado, chopped
Fresh cilantro, chopped
Red onion, chopped
Sour cream
Extra cheese
