INGREDIENTS
9 cups frozen sliced peaches (thawed and drained) or sliced peaches canned in water (drained well) or fresh peaches, peeled, pitted, and sliced (about 9-10 peaches)
3 tablespoons fresh squeezed lemon juice
3 tablespoons bourbon
2 teaspoons freshly grated gingerroot
1/2 teaspoon vanilla extract or one whole vanilla bean, split in half long ways
1 tablespoon unsalted butter
1/2 cup sorghum syrup (or light molasses or honey)
1 cup sugar, plus 1-2 cups granulated white sugar
