Slow Cooked Apricot Beef with Couscous

"This Apricot Beef recipe is absolutely heavenly. Slow cooked until fork tender with tomatoes and spices. A little apricot jam takes it to it's ultimate comfort...."

INGREDIENTS
2 lbs Beef (cut into cubes)
2 tbsp All purpose flour
3 tbsp Olive oil
1/2 cup Onion (chopped fine )
2 cloves Garlic (minced)
1/2 inch Ginger (grated)
2 Bay leaves
1 Cinnamon stick (1 large or 2 small )
1/2 tsp Cinnamon powder
1/4 tsp Cumin powder
1/2 tsp Sweet or hot paprika
1 tbsp Lemon juice
1/2 cup Apricot jam
14 oz Crushed  tomatoes ((1 can))
1 cup Water
1/4 cup Parsley
2 cups Instant couscous
1 tbsp Olive oil
1/2 tsp Salt
4 cups Boiling water
1/2 cup Cranberries
1/2 cup Fresh Pomegranate Pearls
1/2 cup Parsley (chopped)
