1/2 medium yellow onion, thinly sliced
1 red bell pepper, sliced
1 (8-oz.) container baby bella mushrooms, sliced
2 c. shredded carrots
1 1/2 c. snow peas
1 small head bok choy, chopped into 1-inch pieces
3 cloves garlic, finely chopped

3 green onions, thinly sliced, plus more to serve
