Skinny Mint Cookies
"Skinny Mint Cookies are super easy to make and taste like the Girl Scout's treat, but they're bigger! The chocolate wafer cookies I use are Nabisco's Famous Chocolate Wafers. Those are the cookies used for Old Fashioned Chocolate Dessert too. For the picture, I found these fabulous mint flavored plain chocolate cookies called Anna's Chocolate Mint Thins. They're spectacular with this treatment...."

2 cups milk chocolate chips

20 unwrapped Andes candies (chocolate mints)

1/8 teaspoon peppermint extract
•
1 (9-ounce) package plain chocolate wafer cookies
