INGREDIENTS

For the Crust:

1 1/4 cups unbleached, all-purpose flour

1/2 tsp kosher salt
•
1 1/2 tsp granulated sugar

1/2 cup (1/4 pound) butter cut into 1/4 inch pieces
•
1/2 cup cold water
•
2 tbs cider vinegar
•
1/2 cup ice
•
For the Streusel:
•
1 cup flour
•
3 tablespoons packed light brown sugar
•
4 teaspoons granulated sugar
•
1/4 teaspoon kosher salt
•
6 tablespoons butter, cut into 1/2 inch cubes, at room temperature

For the Filling:
•
4 cups mixed stone fruit (I used 2 cups of nectarines quartered, 1 cup of plums halved, and 1 cup of peaches quartered)

2 tbs fresh lemon juice
•
1 cup packed light brown sugar
•
1/4 tsp ground cinnamon
•
⅛ tsp ground ginger
•
pinch of ground clove
•
1/2 tsp kosher salt
