6 large apples (about 4 pounds), peeled, cored and thinly sliced
2 tablespoons fresh lemon juice
3 tablespoons all purpose flour
2 teaspoons cinnamon
1/2 cup plus 6 tablespoons unsalted butter, divided
1/2 cup granulated sugar
1 cup plus 1/2 cup firmly packed brown sugar, divided
Pinch of salt
1/4 cup cool water
1 15-ounce package refrigerator pie crust
or one batch homemade pie crust for a double crust
