cold butter (for binding)

English mustard

For the fried potatoes:
600 g (1,4 lb) potatoes
butter (for frying)
caraway seeds

For gherkin mustard:
200 g (0,6 lb) mustard gherkins
80 g (0,3 lb) Pommery mustard
1 tbsp English mustard
lemon rind (grated)
2 tbsps capers
1 tbsp honey
1 anchovy ring

ground pepper
