INGREDIENTS

4 shallots or 1 large yellow onion peeled and diced

3 garlic cloves peeled and pressed or minced

1 teaspoon whole fennel seeds
•
½ teaspoon red pepper flakes
•
1 tbsp tomato paste
•
28-ounce can crushed tomatoes
•
4 cups seafood stock
•
Bay leaf
•
1½ cups dry white wine such as Pinot Grigio
•
Salt and freshly ground black pepper
•
1 pound cod fillets skin removed, cut into 2-inch dice

1 340g package of Irresistibles frozen Shrimp & Bay Scallops
•
1 dozen mussels scrubbed
•
1 dozen clams
•
1 tablespoon anise flavored liqueur (I used Ouzo)
•
3 tablespoons parsley for serving
