zuchinni bowties

My neighbor Susie, who according to my grand daughter has the most awesome garden had sent over some zuchinni and tomatoes so me and my grand daughter decided to use them for dinner that night.

Ingredients

  • 1 box bowtie pasta
  • 1 can diced tomatoes or 3 fresh diced tomatoes
  • 3 or 4 - zuchinni, sliced then quartered
  • 1 teaspoon basil, dried
  • 1 package sazon seasoning
  • - salt and pepper to taste
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • - parmesan cheese grated
  • - mozzarella cheese shredded

How To Make zuchinni bowties

  • Step 1
    cook pasta according to directions, drain , rinse and set aside.
  • Step 2
    heat olive oil in a pan then add chopped zuchinni, and cook a few minutes, add basil,sazon, salt & pepper. cook until zuchinni is tender but not mush.
  • Step 3
    add tomatoes and cook about 5 to 10 minutes, add butter and cook a few minutes longer, the butter thickens the sauce.
  • Step 4
    add pasta and mix well. serve with a little parmesan and or mozzarella cheese
