This recipe is a great meatless dish and you can add anything left in the garden. Can also add diced cook chicken or ground beef for a heartier meal. Great way to get the kids to eat veggies. This is my first of many recipes I hope to post. Enjoy!!!

Ingredients

  • 4 cups peeled, seeded and diced zuchhini
  • 1 - chopped onion
  • 3 tablespoons olive oil
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 box stove top stuffing-chicken flavor-prepared
  • - salt and pepper

How To Make zuchhini casserole

  • Step 1
    Preheat oven to 350 degrees. In lg fry pan, add olive oil. Saute zuchhini and onion until translucent. Mix with soup and sour cream. Add salt and pepper to taste. Place in 2qt. baking dish. Spread prepared stuffing over mixture evenly. Bake 20-30mins or until mixture bubbling. Makes six 1 cup servings
