zucchini with caramelized onions
I love sauteed zucchini and caramelized onions. I had some leftover onions and tried them together for a delicious side dish.

Ingredients
- 5 zucchini, sliced
- salt, to taste
- black pepper, to taste
- 1 tablespoon oil
- 1/2 tablespoon butter
- 1/2 teaspoon italian seasoning
- 3/4 cup caramelized onions
- CARAMELIZED ONIONS:
- 2 large onions, sliced into rings
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 tablespoons cider vinegar
- 2 tablespoons brown sugar
How To Make zucchini with caramelized onions

Step 1Prepare Caramelized Onions.

Step 2Heat oil and butter in another skillet. Add zucchini and Italian seasoning and sauté until tender.

Step 3Stir in Caramelized Onions.

Step 4Adjust salt and pepper and serve warm.

Step 5CARAMELIZED ONIONS:

Step 6Melt butter into oil and swirl together. Add onion rings and cook over low heat until browned and translucent, about 15 minutes.

Step 7Add vinegar and brown sugar and stir until well-mixed.

Step 8Boil the mixture on medium-high heat and then simmer, uncovered and stir occasionally, for about 10 minutes, or until the liquid has evaporated and the onion has a deep color.
