  • zucchini, sliced (peeling optional)
  • onion, sliced
  • minute rice, white or brown
  • tomato, sliced
  • cheese, shredded any kind you choose
  • bacon

How To Make zucchini tomato casserole

  • Step 1
    There are no amounts to this recipe. In a pan put a layer of zucchini, onion, a thin layer of instant rice, and tomato. Repeat. Top with cheese and then bacon. Bake for 1 1/2 hours at 325 degrees. Cover the first hour. Uncover the last half hour to crisp up the bacon.
