zucchini "stuff"

I wish I had a better name for this recipe but my husband & kids just call it "stuff". This is a great blend of flavors & you can serve it as a side dish or over cornbread and a hamburger patty as a meal.

Ingredients
- 1 large onion, diced
- 1 pound bacon, diced
- 1 large can of diced tomatoes
- 6-8 - zucchini, sliced
- 2 tablespoons red chili pepper flakes
- - salt & pepper to taste
How To Make zucchini "stuff"

Step 1In a large pot add diced onions & bacon and cook on medium heat until bacon is nearly crisp. Stir in canned tomatoes, sliced zuccini and red pepper flakes. Mix thoroughly and continue to simmer over medium heat until zucchini has softened. Approximately 35-45 minutes.

Step 2Obviously you can adjust the red pepper flakes to suit your tastes. I usually add a small amount of chili pequin for a touch of heat. Enjoy!
