zucchini side dish

Zucchini is so versatile .. everything seems to enhance the flavor of it .. this time around I sprinkled garam masala all over it .. and my husband liked the subtle difference in flavor that the garam masala gave it.

Ingredients

  • 4 tablespoons butter
  • 1 medium onion
  • 1/2 cup green pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 cup basil, chopped
  • 3 medium zucchini
  • 1 tablespoon garam masala
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil

How To Make zucchini side dish

  • Step 1
    Melt Butter in large skillet; Add Onions, chopped green peppers and saute on medium heat until onions are almost translucent and green peppers are tender: add garlic and the chopped basil. fry a few minutes more .
  • Step 2
    Slice up zucchini in any shape you like; add the zucchini to the skillet. Turn up the heat to Medium high and saute another few minutes..
  • Step 3
    Sprinkle the garam masala , salt, and pepper all over the zucchini and using a spatula , stir and turn over the zucchini a few times so everything is coated. Cover the pan .. and cook another five minutes to ten minutes ..or until just fork tender.
  • Step 4
    Turn into a serving bowl or platter and drizzle with the olive oil. Serve warm.
