Now that zucchini is so prolific in our area, we enjoy eating this side dish frequently. I have been using this recipe for so long that I can't remember where it came from and it is an easy and fast side dish. You can certainly spice it up for your family's tastes using oregano or Italian spices as well.

- 1/3 cup all purpose baking mix
- 1/4 cup parmesan cheese
- 2 eggs
- 2 cups shredded unpared zucchini
- salt and pepper to taste
- 2 tablespoons butter
How To Make zucchini rounds

Step 1COMBINE BAKING MIX, CHEESE SALT AND PEPPER.

Step 2STIR IN EGGS UNTIL MOISTENED. FOLD IN ZUCCHINI.

Step 3DROP 2 TBSP. OF MIXTURE IN BUTTER AND FRY FOR 2-3 MINUTES ON EACH SIDE.
