Ingredients

3 1/2 c
shredded zucchini
3
eggs
1/2 c
italian bread crumbs
1/4 c
flour
2 tsp
italian seasoning
2 tsp
olive oil
1 can(s)
pizza sauce (about 14 oz)

bell pepper, chopped
1
onion, chopped
1 1/2 c
shredded part-skim mozzarella cheese (6 oz)
1/4 tsp
salt

How to Make Zucchini Pizza Casserole

Step-by-Step

  • 1Place shredded zucchini in a colander over a plate and sprinkle with salt and toss. Let stand for 15 minutes. Rinse and drain well.
  • 2In a bowl, combine zucchini, eggs, bread crumbs, and Italian seasoning.
  • 3Spread in a 11 inch by 7 inch by 2 inch baking dish which has been coated with cooking spray.
  • 4Bake uncovered in a preheated 350 degree oven for 25 minutes.
  • 5In a nonstick pan saute onion and pepper.
  • 6Spread half of the pizza sauce over the baked zucchini mixture. Sprinkle with the sauteed onion and pepper. Sprinkle with half the cheese. Top with remaining pizza sauce and cheese.
  • 7Bake 15 minutes longer or until hot and bubbly.
