This is a delicious way to use zucchini.

Ingredients

  • 3 1/2 cups shredded zucchini
  • 3 - eggs
  • 1/2 cup italian bread crumbs
  • 1/4 cup flour
  • 2 teaspoons italian seasoning
  • 2 teaspoons olive oil
  • 1 can pizza sauce (about 14 oz)
  • 1 - bell pepper, chopped
  • 1 - onion, chopped
  • 1 1/2 cups shredded part-skim mozzarella cheese (6 oz)
  • 1/4 teaspoon salt

How To Make zucchini pizza casserole

  • Step 1
    Place shredded zucchini in a colander over a plate and sprinkle with salt and toss. Let stand for 15 minutes. Rinse and drain well.
  • Step 2
    In a bowl, combine zucchini, eggs, bread crumbs, and Italian seasoning.
  • Step 3
    Spread in a 11 inch by 7 inch by 2 inch baking dish which has been coated with cooking spray.
  • Step 4
    Bake uncovered in a preheated 350 degree oven for 25 minutes.
  • Step 5
    In a nonstick pan saute onion and pepper.
  • Step 6
    Spread half of the pizza sauce over the baked zucchini mixture. Sprinkle with the sauteed onion and pepper. Sprinkle with half the cheese. Top with remaining pizza sauce and cheese.
  • Step 7
    Bake 15 minutes longer or until hot and bubbly.
