Ingredients
- 3 1/2 cups shredded zucchini
- 3 - eggs
- 1/2 cup italian bread crumbs
- 1/4 cup flour
- 2 teaspoons italian seasoning
- 2 teaspoons olive oil
- 1 can pizza sauce (about 14 oz)
- 1 - bell pepper, chopped
- 1 - onion, chopped
- 1 1/2 cups shredded part-skim mozzarella cheese (6 oz)
- 1/4 teaspoon salt
How To Make zucchini pizza casserole

Step 1Place shredded zucchini in a colander over a plate and sprinkle with salt and toss. Let stand for 15 minutes. Rinse and drain well.

Step 2In a bowl, combine zucchini, eggs, bread crumbs, and Italian seasoning.

Step 3Spread in a 11 inch by 7 inch by 2 inch baking dish which has been coated with cooking spray.

Step 4Bake uncovered in a preheated 350 degree oven for 25 minutes.

Step 5In a nonstick pan saute onion and pepper.

Step 6Spread half of the pizza sauce over the baked zucchini mixture. Sprinkle with the sauteed onion and pepper. Sprinkle with half the cheese. Top with remaining pizza sauce and cheese.

Step 7Bake 15 minutes longer or until hot and bubbly.
