Ingredients

  • 3 1/2 c
    shredded zucchini
  • 3
    eggs
  • 1/2 c
    italian bread crumbs
  • 1/4 c
    flour
  • 2 tsp
    italian seasoning
  • 2 tsp
    olive oil
  • 1 can(s)
    pizza sauce (about 14 oz)
  • 1
    bell pepper, chopped
  • 1
    onion, chopped
  • 1 1/2 c
    shredded part-skim mozzarella cheese (6 oz)
  • 1/4 tsp
    salt

How to Make Zucchini Pizza Casserole

Step-by-Step

  1. Place shredded zucchini in a colander over a plate and sprinkle with salt and toss. Let stand for 15 minutes. Rinse and drain well.
  2. In a bowl, combine zucchini, eggs, bread crumbs, and Italian seasoning.
  3. Spread in a 11 inch by 7 inch by 2 inch baking dish which has been coated with cooking spray.
  4. Bake uncovered in a preheated 350 degree oven for 25 minutes.
  5. In a nonstick pan saute onion and pepper.
  6. Spread half of the pizza sauce over the baked zucchini mixture. Sprinkle with the sauteed onion and pepper. Sprinkle with half the cheese. Top with remaining pizza sauce and cheese.
  7. Bake 15 minutes longer or until hot and bubbly.
