zucchini patties

I got this recipe from a friend of my mothers back in the early 80's. Her name was Elaine, and she has since passed. I've made it many times and it's a family favorite of ours. I especially love making it when we have an abundance of zucchini from our garden. Yum! Note: You may also add finely chopped onions and even shredded carrots for a extra flavor and color.

Ingredients

  • 3 cups zucchini, grated
  • 1/3 cup parmesan cheese, grated
  • 1 cup biscuit mix
  • 1 - egg, beaten
  • 1 clove garlic, crushed
  • 1 teaspoon italian seasoning
  • - salt & pepper, to taste

How To Make zucchini patties

  • Step 1
    Mix all ingredients together and drop by spoonfuls into hot skillet with 1/4" oil in it. Note: I like using Canola oil myself.
  • Step 2
    Fry on each side until golden brown.
