I got this recipe off of All Recipes. Everyone just loves these, you can eat cold or hot.
I also double the recipe, they
fly out of my fridge with my family and friends.
2 cgrated zucchini (squeez out excess water)
1/4 cchopped onion
1/2 call purpose flour
1/2 cgrated parmesan cheese
1/2 cshredded mozzarella
·salt to taste
2 Tbspvegetable oil
How to Make Zucchini Patties
- In a medium bowl, combine the zucchini, eggs, onions, flour, Parmesan cheese, Mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden
