Ingredients
- 1 tablespoon butter
- 2 teaspoons garlic, minced
- 4 small zucchini, halved lengthwise
- salt and pepper, to taste
- grated parmesan cheese, to taste
How To Make zucchini parmesan

Step 1Preheat the broiler.

Step 2Melt the butter in a large ovenproof skillet. (Cast-iron works well). Add the garlic and saute over medium-low heat for about 30 seconds, being careful to let the garlic brown.

Step 3Place the zucchini halves cut-side down in the garlic butter and sprinkle lightly with salt and pepper.

Step 4Saute over medium high heat for about 5 minutes, or until the zucchini are just slightly tender when poked with a fork or knife tip.

Step 5Turn the zucchini over, and sprinkle generously with Parmesan.

Step 6Cook for 1-2 minutes, then transfer the skillet to the broiler.

Step 7Broil for about 3 to 5 minutes, or until the cheese is melted and golden brown.

Step 8Serve hot.
