zucchini pancakes (fritters)

This recipe comes from my mother-in-law's sister. A family favorite to use all the fresh zucchini in the summer.

Ingredients
- 1/2 pound zucchini, shredded
- 2 - eggs, well beaten
- 1/2 cup cheddar cheese, grated
- 2 tablespoons bisquick - heaped
- - dash wocestershire, marjoram, minced garlic, salt, pepper.
How To Make zucchini pancakes (fritters)

Step 1Grate zucchini and drain really well, squeezing out excess moisture. Combine all ingredients just before cooking. Fry on hot griddle using a little vegetable oil, approx. 5 minutes per side.

Step 2This is one of those recipes you have to work with to determine how wet or dry the batter should be before frying. Too wet and they won't hold together; too dry and they are too "bready".
