zucchini pancakes (fritters)

This recipe comes from my mother-in-law's sister. A family favorite to use all the fresh zucchini in the summer.

Ingredients

  • 1/2 pound zucchini, shredded
  • 2 - eggs, well beaten
  • 1/2 cup cheddar cheese, grated
  • 2 tablespoons bisquick - heaped
  • - dash wocestershire, marjoram, minced garlic, salt, pepper.

How To Make zucchini pancakes (fritters)

  • Step 1
    Grate zucchini and drain really well, squeezing out excess moisture. Combine all ingredients just before cooking. Fry on hot griddle using a little vegetable oil, approx. 5 minutes per side.
  • Step 2
    This is one of those recipes you have to work with to determine how wet or dry the batter should be before frying. Too wet and they won't hold together; too dry and they are too "bready".
