Zucchini Pancakes

Have some left over shredded zucchini in the freezer, and you can't eat any more bread, try this recipe. I think you will really enjoy this change of pace.

1/3 c
biscuit baking mix
1/4 c
grated parmesan cheese
1/8 tsp
freshly ground black pepper
eggs, slightly beaten
2 c
shredded zucchini*
2 Tbsp

How to Make Zucchini Pancakes


  • 1In a bowl, combine the biscuit mix, Parmesan cheese, pepper and eggs until blended.

    Add the zucchini; mix well.
  • 2In a large skillet, melt butter.

    Drop batter by 1/3 cupfuls into skillet; press lightly to flatten.

    Fry until golden brown, about 3 minutes on each side.
  • 3Garnish with fresh dill.

    *Yellow squash may substituted for the zucchini.
