zucchini pancakes
Have some left over shredded zucchini in the freezer, and you can't eat any more bread, try this recipe. I think you will really enjoy this change of pace.

Ingredients
- 1/3 cup biscuit baking mix
- 1/4 cup grated parmesan cheese
- 1/8 teaspoon freshly ground black pepper
- 2 - eggs, slightly beaten
- 2 cups shredded zucchini*
- 2 tablespoons butter
How To Make zucchini pancakes

Step 1In a bowl, combine the biscuit mix, Parmesan cheese, pepper and eggs until blended. Add the zucchini; mix well.

Step 2In a large skillet, melt butter. Drop batter by 1/3 cupfuls into skillet; press lightly to flatten. Fry until golden brown, about 3 minutes on each side.

Step 3Garnish with fresh dill. *Yellow squash may substituted for the zucchini.
