zucchini onion pie
This was a recipe from TOH that I tweaked to my preferences. Very Yummy way to use up those zucchini's. Use the spices you like...I am always changing the spices. I also have added bacon to this, which was quite tasty. Enjoy!

Ingredients
- 3 - eggs
- 1 cup grated parmesan cheese or have used cheddar cheese
- 1/2 cup canola oil ( that is correct 1/2 cup ) helps to brown the crust
- 1 tablespoon fresh or dried parsley
- 2 - 3 cloves garlic, minced
- 1/2 teaspoon italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups sliced zucchini
- 1 cup biscuit/baking mix
- 1 medium onion, chopped fine or 1 cup green onions sliced
How To Make zucchini onion pie

Step 1Preheat oven to 350 degree F.

Step 2In a large bowl, whisk the first eight ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 40 - 45 minutes or until lightly browned. You could add ham, bacon, different spices and cheeses. A very good recipe!
