zucchini onion pie

This was a recipe from TOH that I tweaked to my preferences. Very Yummy way to use up those zucchini's. Use the spices you like...I am always changing the spices. I also have added bacon to this, which was quite tasty. Enjoy!

Ingredients

  • 3 eggs
  • 1 cup grated parmesan cheese or have used cheddar cheese
  • 1/2 cup canola oil ( that is correct 1/2 cup ) helps to brown the crust
  • 1 tablespoon fresh or dried parsley
  • 2 - 3 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups sliced zucchini
  • 1 cup biscuit/baking mix
  • 1 medium onion, chopped fine or 1 cup green onions sliced

How To Make zucchini onion pie

  • Step 1
    Preheat oven to 350 degree F.
  • Step 2
    In a large bowl, whisk the first eight ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 40 - 45 minutes or until lightly browned. You could add ham, bacon, different spices and cheeses. A very good recipe!
