zucchini mediterranean-style
I'm always looking for ways to use zucchini and this recipe does not disappoint. I love the addition of chickpeas and tomatoes. This recipe is a great addition to any meal or you can make it a main dish and serve it over brown rice.

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 4 cups thinly sliced zucchini
- 1 can garbanzo beans (chickpeas), drained well
- 2 cloves garlic, minced or pressed
- 1/2 teaspoon dried basil
- 1/8 teaspoon dried thyme
- 1/4 teaspoon oregano (optional)
- 1/4 teaspoon sugar
- 1/2 teaspoon salt
- 3 medium Roma tomatoes, chopped
How To Make zucchini mediterranean-style

Step 1Heat oil in a large skillet over medium-medium high heat. Saute onions until tender and translucent.

Step 2Add zucchini and chickpeas to the skillet and add seasonings. Stir well and simmer 5 minutes.

Step 3Add tomatoes to the skillet, cover and simmer 10 minutes or more to your liking. Stir occasionally.

Step 4Serve as a side dish or main dish. Serve over brown rice if desired.
