I'm always looking for ways to use zucchini and this recipe does not disappoint. I love the addition of chickpeas and tomatoes. This recipe is a great addition to any meal or you can make it a main dish and serve it over brown rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 4 cups thinly sliced zucchini
  • 1 can garbanzo beans (chickpeas), drained well
  • 2 cloves garlic, minced or pressed
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon dried thyme
  • 1/4 teaspoon oregano (optional)
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 medium Roma tomatoes, chopped

How To Make zucchini mediterranean-style

  • Step 1
    Heat oil in a large skillet over medium-medium high heat. Saute onions until tender and translucent.
  • Step 2
    Add zucchini and chickpeas to the skillet and add seasonings. Stir well and simmer 5 minutes.
  • Step 3
    Add tomatoes to the skillet, cover and simmer 10 minutes or more to your liking. Stir occasionally.
  • Step 4
    Serve as a side dish or main dish. Serve over brown rice if desired.
