~ zucchini delight ~

Another great way to use up some of that delicious zucchini in your garden. This is a recipe I created a long time ago, that the family has always enjoyed. I hope you enjoy it too. Its also great with some browned sausage. Enjoy!

Ingredients

  • 3 medium zucchini, sliced 1/4 inch thick
  • 5 - 6 slices bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon each, salt, pepper and italian seasoning
  • 3 slices bread, cubed
  • 4 ounces cheddar cheese, shredded
  • 1 - 15 ounces tomato sauce
  • Shredded - mozzarella cheese for top

How To Make ~ zucchini delight ~

  • Step 1
    In a Dutch oven, cover zucchini slices with water and bring to a boil, cook 5 minutes or until just tender. Drain well.
  • Step 2
    In a small skillet, brown bacon with onions and garlic.
  • Step 3
    Preheat oven to 350 degree F. In a large bowl, add drained zucchini, sauce, seasoning, bacon mixture, bread cubes, cheddar cheese, carefully toss until blended. Spread into a medium, greased casserole dish. Top generously with mozzarella cheese.
  • Step 4
    Bake for 35 - 40 minutes or until bubbly and cheese is melted.
