~ zucchini delight ~
Another great way to use up some of that delicious zucchini in your garden. This is a recipe I created a long time ago, that the family has always enjoyed. I hope you enjoy it too. Its also great with some browned sausage. Enjoy!

Ingredients
- 3 medium zucchini, sliced 1/4 inch thick
- 5 - 6 slices bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 teaspoon each, salt, pepper and italian seasoning
- 3 slices bread, cubed
- 4 ounces cheddar cheese, shredded
- 1 - 15 ounces tomato sauce
- Shredded - mozzarella cheese for top
How To Make ~ zucchini delight ~

Step 1In a Dutch oven, cover zucchini slices with water and bring to a boil, cook 5 minutes or until just tender. Drain well.

Step 2In a small skillet, brown bacon with onions and garlic.

Step 3Preheat oven to 350 degree F. In a large bowl, add drained zucchini, sauce, seasoning, bacon mixture, bread cubes, cheddar cheese, carefully toss until blended. Spread into a medium, greased casserole dish. Top generously with mozzarella cheese.

Step 4Bake for 35 - 40 minutes or until bubbly and cheese is melted.
