Ingredients
- 1 large zucchini, peeled, seeded, shredded and squeezed to remove moisture. approx 2 1/2 to 3 cups
- 2 ears of corn, removed from cob
- 1/2 medium onion, grated
- 1 box corn muffin mix (jiffy)
- 1/2 cup flour
- 1 egg
- 1/3 cup heavy cream
- 1/2 teaspoon thyme, dried
- 1/2 teaspoon ground rosemary
- 1/2 teaspoon garlic powder
- 1/4 teaspoon seasoned salt
How To Make zucchini corn fritters

Step 1Mix all ingredients until well blended. Let batter sit for a few minutes.

Step 2Heat a small amount of vegetable oil in skillet. Drop by tablespoons into skillet 3-4 at a time. Fry 4-5 minutes on each side.

Step 3Remove from skillet and drain on paper towels. Salt and pepper to taste and serve with your favorite sauce or jam.
