A delicious use of zucchini that often comes in abundance this time of year. This recipe uses a large zucchini and these will disappear so fast you won't believe it.

Ingredients

  • 1 large zucchini, peeled, seeded, shredded and squeezed to remove moisture. approx 2 1/2 to 3 cups
  • 2 ears of corn, removed from cob
  • 1/2 medium onion, grated
  • 1 box corn muffin mix (jiffy)
  • 1/2 cup flour
  • 1 egg
  • 1/3 cup heavy cream
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon ground rosemary
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon seasoned salt

How To Make zucchini corn fritters

  • Step 1
    Mix all ingredients until well blended. Let batter sit for a few minutes.
  • Step 2
    Heat a small amount of vegetable oil in skillet. Drop by tablespoons into skillet 3-4 at a time. Fry 4-5 minutes on each side.
  • Step 3
    Remove from skillet and drain on paper towels. Salt and pepper to taste and serve with your favorite sauce or jam.
