zucchini chips
In yet another attempt to foster a love for vegetables in my child, I came up with a quick way to make zucchini more kid-friendly. It's a bit like breaded/fried zucchini but without the oil and just enough breading to add some crunch. Next time I plan to add a little grated Parmesan cheese.

These zucchini chips are slightly crisp on the outside and tender in the center. Cooking them under the broiler makes the bread crumbs nice and crispy. Easy to throw together, they're a great snack or side dish and another tasty way to use extra zucchini. So good!

Ingredients
- 2 medium zucchinis or yellow squashes
- 1 - egg
- 1/2 cup bread crumbs, dry
- 1 teaspoon Italian seasoning
- - salt & pepper, to taste

To make the slices even we (carefully) used a mandolin.

Step 1Preheat oven broiler.

Step 2Wash and slice zucchini into 1/4" rounds.

Step 3Place onto greased baking sheet.

Step 4Lightly beat egg in a small bowl and use a basting brush to coat both sides of the slices with egg wash.

Step 5Sprinkle bread crumbs over both sides of zucchini.

Step 6Season with Italian seasoning, salt & pepper to taste.

Step 7Broil for 5-7 minutes.

Step 8Then turn zucchini. Broil for another 5-7 minutes. Zucchini should be tender. Serve this hot!
