Even if you don't like zucchini, this casserole is excellent and so easy to make! I used my Cuisinart with the slicing blade to quickly slice the zucchini.

Ingredients

  • 4 cups thinly sliced zucchini
  • 1 cup chopped onion
  • 1/3 cup butter
  • 1/2 cup chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 2 - beaten eggs
  • 8 ounces shredded mozzarella
  • 8 ounces pkg. of crescent rolls

How To Make zucchini casserole

  • Step 1
    Saute zucchini and onions in butter for 10 minutes or until soft.
  • Step 2
    Add salt, pepper and oregano. Remove from heat and stir to cool (about 10 minutes).
  • Step 3
    Add cheese and eggs.
  • Step 4
    Press crescent dough onto bottom of 9x13 pan.
  • Step 5
    Pour mixture on top and bake at 350 degrees for about 20-25 mins., or until lightly browned on top.
