zucchini casserole

Even if you don't like zucchini, this casserole is excellent and so easy to make! I used my Cuisinart with the slicing blade to quickly slice the zucchini.

Ingredients
- 4 cups thinly sliced zucchini
- 1 cup chopped onion
- 1/3 cup butter
- 1/2 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon oregano
- 2 - beaten eggs
- 8 ounces shredded mozzarella
- 8 ounces pkg. of crescent rolls
How To Make zucchini casserole

Step 1Saute zucchini and onions in butter for 10 minutes or until soft.

Step 2Add salt, pepper and oregano. Remove from heat and stir to cool (about 10 minutes).

Step 3Add cheese and eggs.

Step 4Press crescent dough onto bottom of 9x13 pan.

Step 5Pour mixture on top and bake at 350 degrees for about 20-25 mins., or until lightly browned on top.
