Even if you don't like zucchini, this casserole is excellent and so easy to make! I used my Cuisinart with the slicing blade to quickly slice the zucchini.

  • 4 c
    thinly sliced zucchini
  • 1 c
    chopped onion
  • 1/3 c
  • 1/2 c
    chopped parsley
  • 1/2 tsp
  • 1/4 tsp
  • 1/4 tsp
  • 2
    beaten eggs
  • 8 oz
    shredded mozzarella
  • 8 oz
    pkg. of crescent rolls

How to Make Zucchini Casserole


  1. Saute zucchini and onions in butter for 10 minutes or until soft.
  2. Add salt, pepper and oregano. Remove from heat and stir to cool (about 10 minutes).
  3. Add cheese and eggs.
  4. Press crescent dough onto bottom of 9x13 pan.
  5. Pour mixture on top and bake at 350 degrees for about 20-25 mins., or until lightly browned on top.
