zucchini omelette
This is a recipe that I love to make any time of the year. It is easy, it is a great side dish to just about any type of meal, and it is one of my all time favorites!

Ingredients
- - 2 pounds zucchini, cut into 1/2" pieces
- - 1/3 cup margarine
- - 1/8 teaspoon garlic powder
- - 1 teaspoon basil
- - 2 teaspoons salt
- - 1/2 teaspoon accent® seasoning mix
- - 1/2 teaspoon pepper
- - 1/4 cup grated parmesan cheese
- - 4 large eggs
How To Make zucchini omelette

Step 1Saute squash and garlic in butter 7-8 minutes. Add all seasonings and cook until crispy tender. Combine slightly beaten eggs and vegetables. Pour into buttered 1 1/2 quart casserole. Bake at 400 degrees 25-30 minutes.
