This is a recipe that I love to make any time of the year. It is easy, it is a great side dish to just about any type of meal, and it is one of my all time favorites!

  • ·
    2 pounds zucchini, cut into 1/2" pieces
  • ·
    1/3 cup margarine
  • ·
    1/8 teaspoon garlic powder
  • ·
    1 teaspoon basil
  • ·
    2 teaspoons salt
  • ·
    1/2 teaspoon accent® seasoning mix
  • ·
    1/2 teaspoon pepper
  • ·
    1/4 cup grated parmesan cheese
  • ·
    4 large eggs

How to Make Zucchini Omelette


  1. Saute squash and garlic in butter 7-8 minutes. Add all seasonings and cook until crispy tender. Combine slightly beaten eggs and vegetables. Pour into buttered 1 1/2 quart casserole. Bake at 400 degrees 25-30 minutes.
