I've had great success with this recipe. It's easy to make, and a good way to get veggies in your kids. The recipe makes 48 individual squares, or cut into larger pieces as a side dish.

Ingredients
- 3 cups zucchini, thinly sliced
- 1 cup biscuit mix
- 1/2 cup onion, finely chopped
- 1/2 cup grated parmesan cheese
- 2 tablespoons snipped parsley
- 1/2 teaspoon dried oregano
- 1 clove garlic, finely chopped
- 1/2 cup butter or vegetable oil
- 4 - eggs, slightly beaten
How To Make zucchini appetizers

Step 1Heat oven to 350 degrees. Grease a 9x13" pan.

Step 2Layer the sliced zucchini in the pan.

Step 3Combine remaining ingredients in a bowl and mix well. Pour into pan covering the zucchini.

Step 4Bake until golden brown, about 25 minutes. Cut into squares and serve warm.
